Mandazi
Have y’all ever wondered where mandazi came from? Like who thought of it? Whoever it is they should be celebrated!
Mandazi is the ultimate snack, whether, for breakfast or evening tea or when “kawu” has hit badly and it’s the only thing left in the canteen that you can afford, it’s absolutely delicious. 😋
Mandazi is delicious but my sister’s mandazi is over and above. So like the good sis I am, I’m sharing her recipe with y’all today!
Ingredients:
▪ 2 cups of Azam wheat flour
▪ 1 cup of milk
▪ 2 eggs
▪ 2 tsp of baking powder
▪ 1 tbsp of sugar
▪ Cooking oil for frying
▪ A pinch of salt
Method :
In a mixing bowl combine the flour, baking powder and sugar. Separately whisk eggs into milk. Add mixture to the dry ingredients. Mix till it forms a dough and knead until it is smooth and elastic.
Cover the dough with a damp cloth and allow to sit for 15 minutes. Place dough on a flour-covered table base, roll out and cut into sizeable pieces. Let them rise for a second time.
Heat oil in a deep frying pan and gently dip the pieces into the oil. As they begin to rise in the oil, turn them and let the other side cook till golden brown. Serve warm.😊

Cinnamon, vanilla extract or lemon zest can be used for flavouring.
Can be served with chocolate sauce or icing sugar sprinkled over them.
